New chef at New Ulm Country Club

New menu starts Saturday

NEW ULM The New Ulm Country Club has hired a new professional chef to revamp the Cottonwood Grill, with a new menu rolling out Saturday.

The menu will focus on fresh ingredients and high-end versions of the restaurant's bar food. New items, like citrus ginger crab cakes, will be introduced. Burger offerings will feature hand-made, ground chuck with traditional toppings. There will also be a burger featuring a marinated portabella mushroom cap and another that is Cajun spiced with a crab cake topping.

Tim Huffman, the manager of the Country Club and the Cottonwood Grill, said the addition of a chef is part of a multi-year effort to revamp the bar area into a fully formed restaurant beyond simply providing food for golfers. The process began with remodeling the bar side of the building and renaming the area, Business has doubled since the remodeling, Huffman said.

"The key was doing something to let people know that everyone is allowed to come and eat, even though it's a closed [golf] course," said Huffman," We aim to provide fresh, new items. We want to target the people that like to go to Lola's or the Grand."

He hopes to make the Cottonwood Grill into another eating destination in New Ulm and increase the food business at the club.

Todd Kreilkamp, the new chef, boasts 15 years of experience in the culinary field. He graduated from Le Cordon Blue Culinary Arts Program in Minneapolis. He developed some skills in Caribbean and English high-end restaurants. He worked in chef positions and even as head chef in some of the restaurants. His last job was executive chef for Speakeasy in Janesville, Wis.

Kreilkamp's goals will be to start hosting specialty wine dinners and offer cooking classes.

The restaurant will be separate from the banquet hall and buffet on the other side of the building

The new menu will debut Saturday, and the grill will be open at various days during the week. The restaurant will open for seven days a week in the summer when the golf course opens.
